Courgette and Spinanch soup

Heat 2 tbsps oil and sauté 1 onion and 1 large courgette.

Add 1 potato, 4 oz spinach, a few sprigs of parsley and 2pt of vegetable stock.

Bring to boil reduce heat and simmer for 20 mins.

Liquidize.
Add half a pint of double cream.
