Courgette Cake

12 oz plain flour
12 oz caster sugar
1 1/2 tbsp baking powder
1 tsp salt
6 oz chopped walnuts
4 eggs lightly beaten
1/4 pint veg oil
12 oz courgette grated
2 tsp lemon rind grated

Sift dry ingredients into bowl, stir in walnuts
Add courgettes oil and lemon rind to beaten eggs,
Add to dry ingredients and stil until just moistened.
Pour into loaf tins.

Bake at 180C for 1 hour
Cool in tins for 10 mins.

Turn out and cool on rack.
