Courgette and Potato Rosti with smoked fish (4)
700 gr grated potatoes
350 gr courgettes
50 gr butter
1 tbsp olive oil
2 tbsp chives
Fro serving
4 tbsp crème fresh
100 gr smoked fish
2 tbsp snipped chives.
Heat in heavy based 20 cm frying pan, add half the butter and half the oil. When the butter starts to foam add half grated potatoes, season well and press down with spatula.
Season the courgettes and add to pan, also pressing down, sprinkle chives then press the rest of potatoes and press down.
Cook over a moderate heat for about 15 mins until brown at the bottom.
Invert rosti on baking sheet adding remaining butter and oil when hot,
slide rosti back for 10 minutes until OK .
Cut into wedges serve topped with crème fresh and bits of smoked salmon and chives.
