Courgettes Mediterranean Style

3 tbsp olive oil
1 large onion finely chopped
3 garlic cloves crushed
1 red pepper chopped
8 oz cooked beans
1 400 g tin tomatoes
1 lb courgettes finly sliced
1 level tsp oregano

Heat the oil in the pan
add the onion, garlic and pepper and cook for 4-5 mins
Add beans, tomatoes and courgettes and stir well
Add oregano and seasoning and stir again
cover and cook slowly for 30 mins
Serve on a bed of rice

Allow to cool for 10 minutes before removing from tin.
