8 undamaged round lettuce leaves
1 finely chopped onion
2 crushed garlic cloves
4 tbsp cooked rice
1 tbsp parsley
1 1/2 tbsp pine nuts
Cut thick stalk from base and place in salted boiling water for 30 secs.
Drain and spread on towel. Heat oil add onion and garlic and cook until soft.
Add rice and cook for 1 min more.
Stir in parsley and pinenuts and season,divide rice between leaves.
Roll like sausages, tuck in ends.
Place in a shallow dish and drizzle with oil.
Season again and sprinkle with parsley
