Spinach and Apple Soup

1 oz butter
1 small onion chopped
1 oz wholemeal flour
1 pint vegetable stock
1 lb shredded spinach
8 oz apple puree
1/2 pint milk
salt and pepper
pinch of nutmeg
Lemon juice
Natural yogurt
Alittle parsley finely chopped

1. melt butter and fry onion
2. add flour and cook to a roux
3. add stock slowly, still well and simmer for 10 mins
4. add spinach and cook until tender
5. cool slightly and mix in the apple puree
6. place all ingredients in a liquidiser and blend until smooth
7. return to the pan and reheat slowly together with the milk
8. add salt, pepper, nutmeg and lemon juice to taste
9 Serve in bowls with yogurt swirled on the top and garnished with parsle
