Stuffed Marrow 1 medium marrow 6 tspsps fresh brown breadcrumbs 2-4 tbsps milk 4 hardboilled eggs 4 oz/100g grated cheese salt and pepper pinch of freshly grated nutmeg 1 egg beated a little margarine or butter parsley for garnish. 1. wash the marrow well, cut in half lengthwise and scoop out the seeds 2. Place in a well greased baking tin or dish 3. Soak the breadcrumbs in milk 4. Chop the eggs and add to breadcrumbs together with the cheese and seasoning and nutmeg 5. Bind the mixture with the beaten egg 6. Pile into the marrow halves and dot with knowbs of butter 7. Pour a little water around the marrow and bake in oven 190 for 35-40 mins Serve with a vinagrette sauce with finely chopped onion Goes nicely with tomato and cucumber salad. From Karina Wells |
